5-minute mug muffin

Ingredients
- 1/4 cup rolled oats
- 1 whole egg
- 1/2 banana, mashed
- 1 tsp chia seeds
- 1tbsp milk
- 1tbsp shredded coconut
- 1/4 tsp vanilla essence
- 1/4 tsp baking powder
- 1/4 tsp ground cinnamon
- 1 tbsp natural peanut butter or nut butter
Method
- In a large coffee mug, mash the banana
- Add egg and mix well
- Stir in all the other ingredients except for the nut butter and optional toppings
- Cook on high in the microwave for 1 minute
- Remove. Make a hole in the centre and add the nut butter. Cook for another minute
- Eat straight out of the mug or serve on a plate with toppings
If you want a chocolatey muffin, add 1 tsp cacao or cocoa powder
Serve with your choice of optional toppings:
- 1/4 cup berries - fresh or frozen
- 1/2 banana - chopped
- 1 tbsp yoghurt
- Sprinkle of extra cinnamon
